Job Objective
• Oversee the financial performance, cost management, forecasting (P&L), and budgeting for all F&B outlets (ADD/IRD/Lounge/Bar/Stewarding) in the absence of the Director of F&B
• Ensure strict adherence to all corporate concepts and playbooks across outlets
• Facilitate talent growth and career progression within the department, supporting internal promotions and development initiatives
Essential Job Tasks
Be present on the floor to make sure what is agreed is running.
Areas of Responsibility
• Ensure adherence to IHCL HACCP safety standards across all F&B areas
• Participate in F&B meetings and staff meetings to facilitate effective communication
• Take part in the weekly F&B meeting to exchange information, track target dates, and discuss relevant matters with stakeholders (suggested Friday 3 PM, max 1–1.5 hrs)
• Act as the gatekeeper for training plans and execution, ensuring consistency and effectiveness
• Read the daily log book and communicate necessary actions in the absence of the Director of F&B
• Conduct daily walkthroughs of all outlets to ensure adherence to agreed standards and concepts, immediately rectifying any deviations when needed
• Conduct back-of-house inspections for all restaurants, loading bays, and stores to maintain operational excellence
• Plan and execute the culinary calendar and promotions throughout the year
• Maintain awareness of all discounting policies and ensure compliance
• Assist in coordinating Dine@Taj and other corporate programs
• Support the coordination of festivities and the signing of complementary checks
• Assist in conducting monthly wine & spirit inventory, taking appropriate action when necessary
• Conduct skill and behavioural training sessions for all departmental staff
• Oversee complete bar and drink operations, including training and tasting, in the absence of a bar manager
• Manage guest complaints and feedback-related matters through TrustYou, ensuring timely resolution and service improvement
Required Qualifications
10+2 or Apprenticeship Certification
Diploma/Graduation certification
Work Experience
4 - 6 experience years.
