Job Objective

To obtain a Kitchen Operations Trainee position in a dynamic hospitality environment where I can develop foundational culinary skills, uphold high standards of hygiene and safety, and contribute to smooth kitchen operations through teamwork, discipline, and a passion for food excellence.

Essential Job Tasks

Food Preparation & Support

  • Assist Commis Chefs with basic prep: chopping, peeling, marinating, portioning.

  • Follow standard recipes and plating instructions.

  • Prepare mise en place for various stations.

Inventory & Supplies

  • Receive, inspect, and store kitchen supplies.

  • Label and organize ingredients using FIFO (First In, First Out) method.

  • Report shortages or spoilage to supervisors.

Cleanliness & Hygiene

  • Maintain cleanliness of workstations, utensils, and equipment.

  • Assist in dishwashing and waste disposal.

  • Follow hygiene protocols and wear appropriate PPE.

Safety & Compliance

  • Adhere to food safety standards (e.g., HACCP).

  • Report hazards and follow fire safety and first aid procedures.

  • Maintain temperature logs and cleaning checklists.

Communication & Teamwork

  • Coordinate with chefs, stewards, and service staff.

  • Respond to instructions promptly and respectfully.

  • Support team during peak hours and special events.

Learning & Development

  • Participate in structured training modules.

  • Shadow chefs to learn cooking techniques and kitchen operations.

  • Record learnings and feedback for continuous improvement.

  • Confidentiality & Guest Privacy
  • Maintain discretion regarding guest information and internal operations.

  • Uphold organizational values and service standards.
